Stainless steel — the durable all-rounder

Non-reactive, tough and long-lasting, stainless steel handles everything from boiling to browning. It won't react with acidic foods like tomato or tamarind. The key is a thick, layered (encapsulated) base — it spreads heat evenly and stops thin pans from scorching.

Nonstick — easy cooking, easy cleaning

Nonstick is unbeatable for dosas, eggs and low-oil cooking, and it wipes clean in seconds. The trade-off is lifespan: coatings wear out, so use wooden or silicone tools, avoid high dry heat, and plan to replace it every few years.

Cast iron — heat retention champion

Cast iron holds heat superbly, making it brilliant for searing, rotis and slow cooking. It's naturally durable and improves with use, but it's heavy and needs seasoning and careful drying to prevent rust.

Hard-anodised aluminium — tough and even

Hard-anodised cookware heats fast and evenly like aluminium, but the anodised surface is much harder, more durable and non-reactive. A great middle ground between nonstick convenience and stainless durability.

Quick comparison

  • Everyday versatility: stainless steel.
  • Low-oil & easy clean: nonstick.
  • Searing & retention: cast iron.
  • Fast, even, durable: hard-anodised.

Build a mixed set

Most good kitchens use a mix — a stainless kadai, a nonstick tawa, maybe a cast-iron pan. Match each piece to the job it does best rather than buying one material for everything.
